'FANTA' STIC LEMON CHICKEN

Ingredients

4 CHICKEN BREAST CUT INTO STRIPS

1 ONION FINELY CHOPPED

1 GARLIC CLOVE CRUSHED

2" PIECE OF GINGER MINCED OR FINELY CHOPPED

ZEST AND JUICE OF A LEMON

2 TABLESPOON SOY SAUCE

1 330ml CAN OF FANTA ICY LEMON

Instructions

PUT EVERYTHING IN THE SLOW COOKER

COOK FOR 6-8 HOURS ON LOW

LEAVE THE LID OFF FOR THE LAST HOUR SO THE SAUCE CAN THICKEN 

SERVE WITH RICE AND ENJOY :-)

BBQ PULLED PORK

Serves: Serves 6             Preparation Time: Less than 5 mins prep and 8 hours on LOW

Ingredients

1 PORK JOINT

500ML BOTTLE OF COKE

300G BBQ SAUCE

2 tsp CHILLI FLAKES

Instructions

Put the pork joint in the slow cooker and pour the BBQ sauce over the top. 

Pour the coke around the sides to about half way up the joint and sprinkle the chilli flakes on top of the joint to taste.

Cook on LOW for 8 hours+

Take the pork out the slow cooker and place in a roasting tray and shred by pulling the pork with a fork.

Pour over a few ladles of sauce then cover with foil and let it soak in for 20 mins.

Serve and enjoy :-)

SOAK GAMMON JOINT OVER NIGHT TO REMOVE EXCESS SALT OR BOIL ON THE MORNING OF USE

PUT ALL INGREDIENTS IN THE SLOW COOKER 

COOK ON LOW FOR 8-10 HOURS

SHRED GAMMON JOINT WITH TWO FORKS

Ingredients

4-5 SAUSAGES

CHORIZO SAUSAGE SLICED

2-3 GARLIC CLOVES CRUSHED

1 RED OR GREEN PEPPER CHOPPED

1 TIN OF BAKED BEANS

1-2 TABLESPOONS TOMATO PUREE

1-2 TEASPOONS OF PAPRIKA

SALT AND PEPPER TO TASTE

 

Instructions

COOK THE SAUSAGES AND SET TO ONE SIDE

FRY GARLIC FOR 1-2 MINUTES ON LOW HEAT

ADD SLICED CHORIZO AND PEPPERS, CONTINUE TO COOK FOR 5 MINUTES OR UNTIL PEPPERS BEGIN TO SOFTEN 

ADD THE COOKED SAUSAGES, THE CAN OF BEANS, TOMATO PUREE AND PAPRIKA AND SIMMER GENTLY FOR ABOUT 5 MINUTES, MAKING SURE NOT TO LET THE BEANS TURN MUSHY

sEASON WITH SALT AND PEPPER TO TASTE

SHREDDED BEEF

Ingredients

BEEF JOINT (PRE MARINATED)

BEEF STOCK (OXO OR EQUIVALENT)

2 TABLESPOONS WORCESTERSHIRE SAUCE

SALT AND PEPPER

Instructions

PLACE THE BEEF JOINT IN TO THE SLOW COOKER

ADD BEEF STOCK UNTIL IT COVER 3/4 OF THE JOINT

PUOR WORCESTERSHIRE SAUCE ON TOP OF THE JOINT AND ADD SALT AND PEPPER TO TASTE

COOK ON LOW FOR 6-8 HOURS

ONCE JOINT IS COOKED, REMOVE FROM THE SLOW COOKER AND BREAK APART WITH TWO FORKS

REMOVE GRAVY FROM SLOW COOKER INTO A JUG AND PUT THE SHREDDED BEEF BACK INTO THE SLOW COOKER

THEN POOR THE SUFFICIENT GRAVY OVER THE SHREDDED BEEF TO SOAK 

LEAVE SHREDDED BEEF AND GRAVY IN THE SLOW COOKER ON WARM FOR 30-60 MINUTES

SEASON TO TASTE

4 LARGE SKINLESS, BONELESS CHICKEN BREAST FILLETS

250ML KETCHUP

2 TABLESPOONS MUSTARD

2 TEASPOONS LEMON JUICE

125ML MAPLE SYRUP

1/4 TEASPOON GARLIC GRANULES

2 TABLESPOONS WORCESTERSHIRE SAUCE

1/2 TEASPOON CHILLI POWDER

1/8 TEASPOON CAYENNE PEPPER

 

Instructions

PLACE CHICKEN BREAST INTO THE BOTTOM OF THE SLOW COOKER 

IN A BOWL, STIR TOGETHER THE KETCHUP , MUSTARD, LEMON JUICE, GARLIC GRANULES, MAPLE SYRUP, WORCESTERSHIRE SAUCE, CHILLI POWDER AND CAYENNE PEPPER UNTIL THE MIXTURE IS WELL BLENDED

POUR SAUCE OVER THE CHICKEN

COOK ON LOW FOR 6 HOURS

SHRED THE CHICKEN WITH TWO FORKS AND COOK FOR A FURTHER 30 MINUTUES

3LB DICED BEEF

4 STRIPS OF BACON CHOPPED

4 LARGE POTATOES DICED

500G MUSHROOMS

230G CARROTS THINLY SLICED

Instructions

SPRAY THE INSIDE OF THE SLOW COOKER WITH OIL

ADD THE BEEF, BACON, POTATOES AND THEN ALL THE VEGETABLES

POUR THE WINE OVER THE INGRDIENTS 

ADD HERBS, SALT AND PEPPER TO TASTE

COOK ON LOW FOR 8-10 HOURS

SERVE AND ENJOY :-)
